Seasonal Entrees

Ahhhh, summer - a perfect time of year to enjoy all that your grocer's produce section has to offer. Take advantage of all those ultra ripe fruits and veggies in anything and everything you are eating these days. Spruce up your salad with some mangos, use fresh herbs whenever possible, and pile on the veggies. Here's a few of our favorite summer dinners that are quick, easy, flavorful and nutritious.

Sweet Jerk Chicken Salad

Ingredients:

Preparation:

2 Chicken Breasts - seasoned with Sweet Jerk Seasoning (McCormick) and sliced into bite size strips
4-6 cups Greens - preferably European Field Greens, Mixed Baby Lettuces or Baby Spinach
1 cup Mango, sliced
1 large Tomato, sliced
1/2 Red Onion, sliced
1 Avocado, sliced
2 Plums, sliced
1/4 cup Pistachios
Grilled chicken, slice veggies and toss with lettuce. Sprinkle with pistachios and any low calorie dressing or balsamic vinegar.
