Not your boring iceberg lettuce and big tomato, cucumber and (break-your-teeth) carrot chunks. Get creative! The Body Fit Salad Rule: Ten Ingredients! Veggies, fruits, protein, nuts and seeds (go easy) - it's simple. And tasty too. Constantly changing your ingredients gives you a variety of vitamins and minerals and keeps it interesting. Here's three of my favorites. Check out the Tip of the Week to make these salads a snap.
2 boneless skinless chicken breasts (grilled or baked)
2 cups Mache (European field greens)
2 cups mixed Baby Greens
1/2 cup mango
1 plum or 1/2 apple or 1 cup grapes
1 tomato
1/2 red onion
1/4 cucumber
1/4 cup fresh parsley
2 tbsp. pistachios

Serving size: Dinner for Two

Grilled Chicken and Mango Salad

Slice into bite size pieces and toss together with your favorite low calorie dressing.
